We already have cows. What happens if we choose to sit on our current livestock?
Then you'll just stay with the number you have now.
I think the selling cows thing is mostly for people who went heavily into potatoes to recoup some money before paying the January monthly wages; buying extra animals early on has some risk involved (since they cost money to feed and so on) but is generally a good investment (cows gives milk and calves, so the earlier you get them the more milk money you make from them).
You might of course end up losing some animals to hazards.

SPRING AUCTION
Dealers are offering high prices for first-class dairy cattle. Farmers can sell up to five cows if they want to for £65 each.
Sale of Stock, by Auction with Reserve:
1 cow, with reserve £65.
1 sow, with reserve £35.
2 cows, with reserve £130.
1 horse, with reserve £40.
1 cow, with reserve £65.
So, several things for you to do here! First, decide if you want to sell any cows - you can sell up to five, and you'll receive £65 for each one you sell.
Second, decide if you want to buy any of those lots. The reserve means that they won't be sold unless they reach at least that price - so think of it as a minimum bid. If you want to buy any of the animals up for auction here, post which lot you're bidding on and how much you bid - e.g. "I'll bid £130 for the third lot."
If someone has already bid on a lot, you'll obviously have to bid higher than them if you want to win it - e.g. "I'll bid £140 on lot 3." You can keep bidding as much as you like. Whoever has the highest bid by the next time I update will win the lot.
If no one bids on a lot, no one gets it, obviously.
A little bit of tactics advice! In spring, animals like cows and sows have their babies - so the more cows and sows you have, the more babies you'll get![/acronym]
So is each one a seperate lot?
If that's the case, I'll bid 67 on the one cow with 65 reserve? Am I doing this right? I don't know what I'm doing.

It's okay, I was kind of confused about it at first too.Well I just thought they were just animals for sale, I wasn't sure if they were on lots. I thought of lot as being like a plot of land or something.

In acuction terms, a lot is the single thing you're bidding on - it might be just one item, or it might be several items (like those three cows up there). In this case, we have five different lots.
A reserve price is a limit the seller puts on their lot; it says that the auctioneer won't sell the lot unless it reaches at least that amount (usually with a little bit of auctioneer's discretion if it gets close).
