I just assume he died of his injures from Ganondorf's attack, since Navi says "He's not moving anymore." when you try to talk to him again.

Well, You see him in town before ever reaching the castle. And once you finally meet Zelda in the courtyard of the castle, she shows you Ganondorf (presumably) entering the presence of the King inside. At this point he's bowing and smiling, and evidently in the good graces of the court, so he hasn't launched his big attack yet. Did he, or one of his minions attack the soldier surreptitiously? I don't know.

Another thing, he's placed where its easy to miss him (intentionally?), and his advice to go to the Temple of Time isn't even needed at this point (at least I always knew where to go, possibly from Navi). Very mysterious.
The only thing that this whole thread has shown me was that I didn't do nearly enough exploring in OoT. It almost warrants another playthrough. Almost.
